Comments: Johnnie's Pier 31, inspection conducted Thursday afternoon during dinner prep, and was begun during the first half hour of an hour-long power outage in the area. Discussed operations during power loss; biggest impact occurs during Summer time due to the importance of refrigeration. The floor around the 3-bay sink has been painted. The hood and cookline equipment are adequately maintained clean and sanitary. Discussed the regular maintenance for the kitchen cermic tile floor and the wire rack shelves in the refrigerators. Hair restraints and hand barriers utilized. Obvious improvement in cookline cleanliness was observed during this inspection. The kitchen walls and ceiling have been painted since last inspection, and water damaged area of the walk-in cooler has been repaired and the interior has been finished, smooth and cleanable.
