Discussed cleaning routine and procedures for the kitchen equipment and refrigerators. Restrooms available and maintained. All hot holding temps adequate at the BBQ Pit: Sausage = 168F, Brisket = 168F, Pulled Pork = 147F, Baked Beans = 140F, and salt potatoes = 166F. Chicken halves were sold out before inspector arrived. Hand wash station set up at BBQ Pit. Digital thermometer utilized. Pre-packaged utensils available. Discussed the requirement of "NSF Approved" or "Commercially Rated" kitchen equipment when researching replacements. Cold holding items adequate: tomatoes in the deli cooler = 41F, chicken wings in refrigerator = 38F. The Hi-Way Bowl is currently "For Sale", discussed with owner/operator that permits are non-transferable upon the sale of property.
