Comments: Servomation Commissary, inspection conducted Thursday. Assembly of pepperoni & cheese and crackers snack packs, and some deli sandwiches in process during this inspection. Cold holding temps adequate throughout. Food adequately protected during assembly; hair restraints and hand barriers are worn. All lights through facility have been changed to LED fixtures and bulbs. The mop sink has been fixed and is now functioning. Discussed cleaning schedule and routine for warehouse containers and storage areas. Most food products are commercially precooked/prepped, and the catering side of the operation prepares fresh sauces for pastas and some dips. The facility was recently inspected by the US Public Health Corp, due to Servomation food now being available to/at Fort Drum.

Hand barriers utilized as required. Discussed cooling methods and provided cool & reheating brochure. Product stem food thermometer accurate at time of inspection. Discussed coolers and containers utilized for to store and transport food; shall be storaged off the floor and maintained clean and sanitary. Discussed icing within warehouse walk-in freezer; ice removal required. Meat slicer has been removed from facility. Discussed maintaining an adequate air gap on food preparation sink.

Comments: Servomation - Commissary (Bistro To Go), inspection conducted Tuesday afternoon, during post-production clean-up. Food prep and production conducted daily and shipped out same day or the next morning. Today, production consisted of 3,339 total units, primarily: veggie, cheese and cracker trays, and deli sandwiches. Commissary walk-in refrigerator and freezer now utilized for holding commissary finished products. Discussed the meat slicer cleaning procedures and routine. Hair restraints and hand barriers utilized. Two designated handwashing stations available. Operator and staff are complimented for overall facility cleanliness and maintenance.

Comments: Servomation commissary inspection conducted Tuesday morning during sandwich making, vending machine item preparation for: "Bistro To-Go", Servomation's fresh-food brand. Food safety smock, hair restraints and hand barriers are worn by all personnel entering the production area. All item ingredients are pre-cooked, and pre-frozen prior to assembly. The only on-site prep or production is of/for pasta sauces. Dedicated Handwash stations available (2). Discusssed sick worker policy. Discussed production processes and procedures for holding and distributing and ensuring proper temperature control, no issues observed. Thermometers available throughout. An employee break room with lockers and restrooms are available. Servomation is contracted with Ehrlich Pest Control Co., no issues observed. Discussed walk-in cooler(s) cleaning schedule and procedures. Operator and staff are complimented for overall cleanliness and process.

Future plans for commissary to be used to stock vending machines. Table mounted can opener maintained sanitary. Thermometers available throughout facility. Sanitizer available. Discussed cleaning schedule for coolers. Please give notice to MCDOH when the kitchen becomes full service for vending machines.
