The water can be stored on ice or refrigerated to remain at/below 45F or (if held at room temperature) MUST be changed at a minimum of every two hours and time-logged to demonstrate compliance with procedures required for using time as a public health control. No reinspection required at this time, but appropriate holding procedures for the chicken wash should be implemented immediately and will be reviewed by OCHD representative at next routine inspection or field visit.
