Floors under racks in walk-in cooler and freezer not clean. Three bay sink not clean, dishes sit in dirty stagnant water for hours. Drain on dish machine not clean. Employeees do not wash hands as required, sanitizer water not clean. Bakers pans, esp. souffle pans noted with black build up and not clean. Bags of frozen soup get craked open from being dropped on floor and still put into thermalizer and water seeps into product. Food that is suppose to be discarded at end of night reused next day. No items noted thawing, went over proper thawing procedures with manager. No raw meats in establishments, raw eggs stored on lower shelf in walk-in cooler. Floors under racks noted with mild build up. Drain on dish machine acceptable for daily use. Discussed proper hand washing with manager. Sanitizing solution satisfactory. Bakers pans were black from use but not build up. No broken bags of soup noted in thermolizer, water appered to be clean with no soup debris. Establishment may reused food for the following day if proper procedure is followed. Discused complaint with management. No further action taken at this time. | ||
