Breaded chicken, shrimp and fish is discarded after 30 minutes. Cold holding temperature of salsa, chopped tomatoes and chopped lettuce observed at tempertures ranging from 35-38 degrees Fahrenheit. Hand barriers utilized as required. Product stem food thermometer evaluated for accuracy. Fish and hush puppy batter holding procedures reviewed. Facility is well maintained and nicely operated.

Discussed and observed corporate holding times vs temperature and coded labels (dots) procedures, stricter than NYSSC. Aprocedure has been amended to adequately address floor cleaning and the installed floor drains. Reviewed Corporate hush puppy and fish batter holding policy. Hair restraints, hand barriers, and sanitizer buckets utilized. Temperature logbook maintained. Restrooms adequately maintained. Operation is complimented for overall cleanliness and established procedures.
