Crispy chicken observed at 185 degrees Fahrenheit immediately following cooking process and prior to placement within hot holding unit. Observed chicken breading and cooking process from start to completion. Product stem food thermometer evaluated for accuracy. Dishwashing facilities consists of a pot dishwasher with manual wash, rinse and sanitize method; dishwash facility equipped with detergent and sanitizer as required. Sanitizing solution is prepared for use in multiple locations. Discussed replacement of sheet trays; trays are becoming hard to clean as a result of overuse. Discussed removal of equipment no longer in use. MCDOH to provide facility with a new choking poster. Contractors are scheduled to repair/replace floor in chicken preparation area this evening.
