Comments: A much improved food service operation. Hot holding temperature of sausage pizza and chicken pizza observed at temperatures ranging from 151-163 degrees Fahrenheit. Cold holding temperature of diced tomatoes, chick peas, potato salad and chopped lettuce observed at temperatures ranging from 35-40 degrees Fahrenheit as stored on the salad buffet line. Waitress area refrigeration unit has been repaired and is functioning at a temperature of 40 degrees Fahrenheit; manager is in the process of purchasing caps for unsealed openings. Numerically scaled indicating thermometer observed within all refrigeration equipment. Hand wash stations equipped as required. Improvements observed regarding floors; linoleum within walk-in refrigeration unit has been removed and replaced. Light bulb within salad buffet unit has been replaced with a shatter-resistant bulb. Improvement observed in regards to refrigeration condensor fans. Discussed recent cleanliness complaint with store manager.

Discussed and viewed area within walk-in refrigeration unit which staff indicates leaks from the exterior of the building occasionally, typically during the spring thaw; Mike's refrigeration has been solicited to correct the problem. Discussed bathroom sinks and caulk behind faucets; excessive caulk inhibits adequate cleaning.

Comments: Re-inspection conducted Wednesday, post-lunch-rush. Significant improvement in overall cleanliness observed during re-inspection. The shelving units throughout the restaurant have been cleaned and are free of accumulated dust. The exterior of the coolers and prep unit have been recently cleaned and are free of accumulated grease. The ice machine interior and the table mounted can-opener are clean and daily cleaning procedures have been incorporated. Discussed with manager Drew, the layer of grease accumulation on the kitchen ceiling prevents adequate removal of accumulated dust. Grease and dust are still present on the kitchen ceiling. The vents have been cleaned, but the recurring dust build-up on the vents over the server's station and check-out counter continues to plague the facility. The floors throughout the restaurant appear to be much cleaner than observed at last inspection.
