Item 1H (Critical): Food from unapproved source, spoiled, adulterated on premises. Comments: Field visit this date to investigate complaint F2071, mold in shaker of parmesan cheese. Upon inspection the complaint was confirmed and the above violation was issued. An inspection of the walkin cooler found the ambient temperature to be 39 deg F. A supply of various bulk of cheeses was inspected and found to be unadulterated. The supply of parmesan cheese was in original package and temp'ed at 40 deg F. All shakers of cheese were inspected and found unadulterated. Operator was advised to collect all shakers of parmesan each day, inspect for tampering and store in walkin cooler over night. Operator was also advised to offer limited amount of shaker product to public. No further action required |
