Cold holding unit temps adequate; tuna salad 41F, tomatoes 38F, and pizza prep cold holding items found at 36F. Thermometers installed throughout all coolers. All employee 's hair found to be adequately restrained. Discussed with A.N., the installation of a shelfing unit in the storage room. Owner and staff are complimented for overall cleanliness. |
