Wednesday "Canteen" service in progress. Haddock, pork loin, maccaroni and cheese, and corn for lunch, today. Kitchen operations consist of Wednesday Canteen for veterans, and random events scheduled throughout the year. Discussed hot holding procedures and "Canteen" routine. It was revealed during the inspection, that during service, a volunteer replaced and refilled the sterno chafing-dish with cold water instead of boiling water, and the fish lost temperature as a result. Hair restraints and hand barriers utilized throughout. Thermometers installed in all coolers. Food items found to be adequately protected during storage. The ceiling of the walk-in cooler has been repainted. The plumbing in the basement was evaluated, and determined to be water supply lines over the shelving in the basement storage room. Staff and volunteers are complimented for cleanliness and procedures. |
