Temperature of mozzarella cheese in pizza make unit was 41 F. Temperature of diced tomatoes at walk in refrigerator was 38 F. Observed unattended bags of cheese on prep table at temperatures of less than 45F. Recommended working in small manageable quantities in order to keep Time/temperature control foods at or below 45 F. Food worker returned cheese to refrigerator during inspection. Staff was using gloves when handling ready to eat food to prevent bare hand contact. Discussed ill worker policy. |

Sink is no longer used and will be removed or replaced or otherwise corrected prior to or during renovation. Demonstrated calibration of probe thermometers. Recommended obtaining digital thermometers. Spoke to owner regarding tentative plans for renovations throughout entire store. Advised owner to provide copy of plans to be reviewed prior to construction.
