Observed second plastic bus pans of cooked noodles under active cooling at 3 inch depth, without lid, in commercial refrigerator. Meatballs in marinara sauce were actively cooling in depths less than 4 inches, without lids, with cooling paddles placed within sauce in commercial refrigeration. Observed bleach based sanitizer in 3-bays sink with a concentration of 200 ppm (chlorine) per facility's test strips. Staff was wearing gloves while handling ready to eat foods such as ham, which staff took temperature after cooking with digital thermometer. |
