All bays must be reserved for each action of the dish-washing procedure which is the following: Wash - Rinse - Sanitize - Air Dry. Recommend placing another rack for drying dough pans—there is currently insufficient space for air-drying. 2. Strong odor coming from sub-pump in mop closet—must be cleaned. 3. Observed two 2-gallon buckets containing recently cooked soup in the walk-in refrigerator. Both food items temped at approximately 125°F. Education provided on cooling large amounts of food product in shallow pans, no more than 4 inches deep. After food product is cooled to 45°F, it can be placed back in the large container for storage.
