When cooling items the entire item must go from 120 degrees F to 70 degrees F in two hours, THEN from 70 to below 45 degrees F within 4 hours. At the time of inspection proper hot holding was addressed, All potentially hazardous food items must be maintained at or above 140 degrees F.
