No contamination of food contact surfaces observed during inspection, however, discussed sanitizing all food prep stations prior to preparing food with manager during inspection. Facility has hanging thermometers in all cold holding units. Facility has appropriate test strips to measure levels quaternary ammonia in sanitizing solutions. Sanitizing solution found in wiping cloth buckets was 200ppm according to facilities test strips. All workers were wearing gloves to prevent bare hand contact when handling ready to eat foods. |

Comments: Conducted a re-inspection due to previous violations involving walk-in refrigerator and freezer units which were noted on inspection report of April 4, 2017. No food items were observed improperly stored on floor inside both walk-in refrigerator and freezer units. Regarding walk-in freezer, no condensate ice build-up was observed either on cases of food, storage racks or floor inside unit. Freezer appears to be functioning satisfactorily at time of re-inspection. | ||

Comments: Conducted a re-inspection due to previous inspection report of 4-4-17. Monitoring thermometer available inside refrigerated storage unit at front counter which contained potentially hazardous (TCS) foods- interior temperature acceptable- less than 45 degrees F. Checked walk-in cooler- no food containers improperly stored on floor of walk-in cooler. Also checked walk-in freezer- no evidence of frozen condensate from ceiling vent inside freezer either on racks or floor of walk-in freezer. Per Manager (Krunall), rear entrance (metal) door is scheduled to be replaced in near future. Manager was instructed to contact City of Elmira Code Enforcement Dept for input since existing door has panic hardware and is an emergency exit for employees. | ||
