According to Ms. Watson, the patties were cooked to initial cook temp. of >=140 derees ~30 minutes prior and put into room temperature buns. Mashed potatoes, also cooked ~30 minutes prior, measured @ 130 degrees on service line. Inspector allowed for reheat to >=165 degrees and to be held @ >=140 degrees until served to the children. Corrected. 11D--Some build-up on gaskets of walk-in cooler and walk-in freezer doors. 15B--Some dust build-up on exhaust fan covers in walk-in cooler and walk-in freezer.
