Holding and cook temps observed: 160F, 170/183F, 163F, and 158F. Product Stem thermometers utilized. Pre-wrapped utensils available. Hair restraints and hand barriers used/worn. Dishwasher observed to be working as per manufacturers specs, as per digital read-out. Discussed the walk-in freezer; the freezer went down over the weekend, and when staff arrived the contents of the freezer had to be discarded to the trash. Staff is complimented for cleanliness and routine.

Commercial high temperature dishwasher operated in accordance with manufacturer instructions; final rinse temperature observed at 183 degrees Fahrenheit. Sanitizing solution prepared for use and observed in multiple food service locations. Ventilation hood clean. Previous damage to kitchen wall(s) has been repaired.
