Comments: 5A One bus bucke filled with mayonaise based macaroni salad and one partially filled with potato salad were found in walk-in cooler measuring 48F. According to operator walk-in cooler had been defrosted the day before. Food items were subjected to a temperature above 45F for greater than two hours. Correction: Mayonaise based food items were voluntarily discarded. Operater was instructed to relocated potentially hazardous food to another cooler when monthly defrosting of unit occurs. 5B Covered bus bucket full of cooked potatoes used for potato salad was found in cooler measuring 113F. Cooling method of covered product does not allow for proper cooling (120F to 70F in two hours; 70F to 45F in four hours). Correction: Bus bucket of potatoes was uncovered. Food probe thermometer used to ensure proper cooling. |
