The operating nature of the buisness has changed. For most large events such as weddings, the facility allows catering operators to cater the event utilizing the facility equipment. The operator shall ensure that the catering of events is provided by catering operations which have a current catering permit to operate in Clinton County.

Comments: Clam identification tags were already gathered for 90 day retention by operator. All critical control points for clam bake with chicken were reviewed with volunteer food handler. The steamed clams (no intentions of serving raw as per interview) and chicken were to be cook and serve with no leftovers. Gloves, thermometers, and sanitizer were in use.
