Comments: The following were reviewed: thermometer calibration with the correct amount of ice to achieve a solution of 32°F of ice water; proper thawing methods for sealed plastic sealed foods is not under flowing water; sufficient hair restraint for food handlers; proper cooling of foods; and reheating of foods. Interview and review of cooling logs indicated an ice bath is used to cool from 120°F - 70°F; then shallow, thin layers under refrigeration from 70°F - 45°F. The response of the kitchen manager when asked the minimum temperature requirement for reheating foods was 160°F (not 165°F) and his inability to state any "actual" temperatures seen when monitoring daily reheating of foods; prompted the inspector to strongly recommend the operator use daily reheating logs with written instuctions to ensure all foods being reheated are greater than 165°F.

Comments: All violations must be corrected and are subject to enforcement. CCHD has recieved a complaint about the facility garbage storage. The storage shed is lacking a door and vermin proof construction. The operator has stated that there is a plan to have this shed construction corrected within 45 days. According to the operator, the city trash service collects the trash daily Momday through Friday. No trash bags were present in the shed at the time of inspection, but there was some loose paper trash present.

Comments: This is the second 2016 routine inspection. The cook was not able to give actual times and temperatures of foods during the cooling process. This indicates there is a lack of monitoring for proper cooling. Inspector recommends: 1) Cooling logs be established and available for review at inspections; and 2) the wall mounted, removable knife holder be replaced, and hung against a stainless steel wall surface. Inspector gave botulism prevention training by informing the operator about:1) the requirement that the whole raw shallots and garlic they use with oils, butters, and reductions must be temperature controlled; and 2) The manufacturer vacuumed packed frozen fish they use must be thawed and cold held in a refrigerator holding at 41*F or less (not 45*F or less used for other foods) and be used within 7 days after being removed from the freezer.
