Interview and review of cooling logs indicated an ice bath is used to cool from 120°F - 70°F; then shallow, thin layers under refrigeration from 70°F - 45°F. The response of the kitchen manager when asked the minimum temperature requirement for reheating foods was 160°F (not 165°F) and his inability to state any "actual" temperatures seen when monitoring daily reheating of foods; prompted the inspector to strongly recommend the operator use daily reheating logs with written instuctions to ensure all foods being reheated are greater than 165°F. |

The cook was not able to give actual times and temperatures of foods during the cooling process. This indicates there is a lack of monitoring for proper cooling. Inspector recommends: 1) Cooling logs be established and available for review at inspections; and 2) the wall mounted, removable knife holder be replaced, and hung against a stainless steel wall surface. Inspector gave botulism prevention training by informing the operator about:1) the requirement that the whole raw shallots and garlic they use with oils, butters, and reductions must be temperature controlled; and 2) The manufacturer vacuumed packed frozen fish they use must be thawed and cold held in a refrigerator holding at 41*F or less (not 45*F or less used for other foods) and be used within 7 days after being removed from the freezer. |
