Observed all potentially hazardous food or time/temperature control for safety (PHF/TCS) items at a temperature of 45F or less in all service-line coolers, refrigerators, and walk-in cooler. Observed employees wearing gloves while preparing ready-to-eat steak salad. Observed steak cooked to 173F and chicken cooked to 197F on grill. Observed properly cooked and cooled pasta stored in the walk-in cooler at 39F. Discussed discarding spoiled foods, as well as procedure for washing and preparing garnishes. Observed ice scoop properly stored with handle out of the ice in order to prevent contamination of drink ice and discussed storage of soda gun line so that it does not come into contact with drink ice. Observed adequate soap, paper towels, and hot/cold water at alll hand washing stations throughout kitchen and in toilet rooms. Observed adequate levels of chlorine sanitizer (200ppm) in dish washing unit and adequate levels of quaternary ammonia sanitizer (200ppm) in wiping cloth buckets using facility's test strips to evaluate both. | ||

Observed adequate levels of chlorine (100 ppm) used as sanitizer in facility's dish washing machine and observed facility's test strips for testing both chlorine and quaternary ammonia sanitizer levels. Observed several items thawing on racks in the walk-in cooler. Temperatures of all cold held items in all make units and other refrigeration units found at temperatures of 45F or less.
