Observed dumpster pad with bagged pizza dough littering grounds around and beneath dumpster there. Non refrigerated truck loaded with fresh trayed pizza dough idling in driveway. Boxed cold food delilvered and now stored on floor throughout food prep areas unrefrigerated. All food items sorted by temperature with food for use today relocated to reorganized large 2 door cooler and small reach in cooler normally used exclusively for soda. Pizza dough was not considered hazardous, as indicated within ongoing discussions with PDO during event, and became unuseable as it expanded withinin non refridgerated storage. A minimun amount of dough was stored at pizza prep bain marie unit, within below counter reach in section. 2 boxes of Parmesean cheese 45.6 and 44.6 degrees relocated to bain marie reach in 2 boxes shredded cheese 48 and 45 degrees, 3 boxes Bleu Cheese (1.25 oz cups) 40-45 degrees relocated to large and small reach in coolers Following list of (coldest) food was isolated, packed tightly together, wrapped in plastic and covered with insulated pizza delivery bags to wait for transport to Kingston shop where proper refrigeration is provided, as follows:1 box Shredded cheese 7.6, 3 boxes breaded boneless chicken19.3/20.7/21.6, 1 box beef crumbles 26.3, 1 box cheese for pizza 19.4, 1 box Alfredo sauce 20, 1 box chicken breat strips 34.5, 1 box chicken wings 23.4 degrees. |
