He is filling in until a permanent replacement can be found for this location. He states he does want to pursue a waiver for deli meats. Inspector provided him an application and instructed him to contact RCDOH for further information.

Comments: The deli meat is put out at 11:00 AM and discarded at 1:30PM every day as they only serve lunch for two hours, so even though the food was discarded upon request it was going to be thrown out shortly anyway . Advised operator either to have deeper trays or fill ice sink up more at the deli line to make sure deli meat stays cold or to apply for a deli meat waiver with the DOH. Head chef's boss has apparently been trying to come into contact with the DOH about issues with the waiver but has not reached them. Gave John and Jeanne's cell phone numbers (845-364-2600 and 845-364-2601 respectively) so they can go over such misunderstandings.
