Trip to site from school prep is said to be approximately 10 minutes but traffic and other factors can impact delivery time and make it longer. Cooked carrots at 168 degrees. Sanitization adequate. Kitchen refrigerator temperatures adequate. Hot bagel with cheese and turkey sandwiches found to be at 120 degrees at time of inspection. Returned to hot hold unit. Salads found at High School cafeteria to be within adequate temperature were found at this satellite site to be at 56 degrees. Fresh salads with lettuce and tomatoes were returned to refrigeration without stacking, for rapid recooling. A second cooling unit at service line to maintain salad and temperatures of other potentially hazardous foods was suggested by Kitchen Manager. Discussion of ice packs as a suggestion to maintain safe cold temperatures during transport and service. Refrigerator and freezer logs maintained. All violations may result in enforcement. Education given on all deficiencies. |
