Comments: During the course of the inspection the concern with cold holding units to be able to hold all potentially hazardous food items at or below 45F was discussed. When measuring the temperature of the unit employees should only evaluate temperatures of the actual food items that will represent the operation of the cold holding unit. While conducting the inspection proper cooling and storage of potentially hazardous food items was discussed. When a potentially hazardous food items has been cool to 45F or below it maybe then combined into a container for easier storage.
