The lower section of the cooler is not in use at time of inspection, vessels of water placed in cooler are measured at. 49 F, air temperature of the cooler is measured at 54 F. The roasted peppers in the top portion of the cooler are measured at 43 F. Marinated chicken filets previously stored in the lower portion of the cooler are now being stored in the walk in cooler. Temperature of raw chicken in the lower portion of the unit is at 49 F. These breasts were placed into the unit around 11am as per interview with employee. The meat was voluntarily discarded at time of inspection. Operator will need to maintain unit at 45 or less in order to use. |
