Item 11B: Wiping cloths dirty, not stored properly in sanitizing solutions Comments: Reinspection was conducted to determine status of violations from July 27, 2018 inspection. Food service for the day had not yet begun - they serve from 12 - 5pm. 1. I confirmed that a new deli refrigerator had been installed. DOH temperature probe left inside empty deli fridge read 45°F. I advised chef that a cooler temperature would help ensure that food remained at a safe holding temperature. The chef voluntarily turned the temperature setting from 45°F to 40°F. Education was provided regarding frequent checking of food temperatures in the deli fridge and adjusting the units settings as needed. 2. A thermometer was present in the base unit of the deli fridge. 3. No sanitizer test strips were present at the facility. |
