Thermometers were not readily avail easily upon request. you must purchase thermometers for each food service area including digital and analog ranging from 0-220 °F at a minimum. Using Time as a Public Health Control was discussed for hot and cold potentially hazardous food on the staf serving line. Forms were reviewed and found to be acceptable. strongly recommend setting a timer to alert staff when it is time to document and discard food. |
