Comments: Manager has 30 years in food service - mostly on the job training, with some corporate training and has Serv Safe training also - Inspection in response to a complaint received - Reported Cole slaw had been stirred with bare hands - employees are to wear elbow length gloves when making Cole slaw - Complaint said water used to thaw chicken was reused to wash dishes - Chicken is usually thawed in cooler, but if it is thawed in a sink, it is in the single bay sink and dishes are washed in the three bay sink - Complaint also said kitchen was dirty - At time of inspection floors and some counters were dirty, but manager reports they had a very busy lunch and kitchen is cleaned each night.
