Comments: Comment: Discussed monitoring for proper cooling (120F to 70F in two hours; 70F to 45F in four hours) of turkey roll roast using metal stem food probe thermometer with cook. Menu served on day of inspection was roast beef on roll, baked beans, grapes and milk. Items checked during inspection included: accuracy of food probe thermometer, availability of handwashing in food prep area, availability and use of barrier (gloves) for handling "ready to eat" food, proper concentration of sanitizer, proper sanitizing by dishwasher, proper food storage and general sanitation.

Comments: Comment: It was learned during inspection that one of two refrigerators was not consistantly maintaining proper cold holding below 45F. Cook verifies proper cold holding daily, logging ambient temperatures. It was at this time that she realized the temperature of one of the refrigeration units was not reading where it typically would measure. She was able to maintain normal food service operations despite taking it out of service. They do plan on repairing o replacing it. Items checked during inspection included: availability of handwashing in food prep area, accuracy of food probe thermoeter, proper concentration of sanitizer for wiping cloths, proper sanitizing by dishwasher, proper food storage and general sanitation. Menu served during inspection was Baked ham, rice, peas, orange slices and milk.
