Cook verifies proper cold holding daily, logging ambient temperatures. It was at this time that she realized the temperature of one of the refrigeration units was not reading where it typically would measure. She was able to maintain normal food service operations despite taking it out of service. They do plan on repairing o replacing it. Items checked during inspection included: availability of handwashing in food prep area, accuracy of food probe thermoeter, proper concentration of sanitizer for wiping cloths, proper sanitizing by dishwasher, proper food storage and general sanitation. Menu served during inspection was Baked ham, rice, peas, orange slices and milk. |
