Comments: Comment: Menu served for Autumn Dinner included Speghetti and meat sauce, salad, bread, milk, coffee and ice cream. Inspector discussed preparation of meat sauce with cook. This involved cooking the 90 lbs. of hamburger meat Friday night at Sacred Heart Church in Chazy. Cooling it in shallow pans (less than 4" depth); placing the cooled hamburger in ziplock bags on the morning of the event and transporting it in coolers directly to OLVA Kitchen; The hamburger was mixed in with heating marinara (canned) sauce; it was heated to greater than 165F prior to the meat sauce being placed in chaffing pans which were hot held by sterno on the serving line. Proper reheating (above 165F and hot holding above 140F) was verified during inspection. Also checked were the following: accuracy of food probe thermometers, availability of handwashing where food is being prepared and served, use of barrier when handling "ready to eat" (all food workers were doning gloves), availability of sanitizer for wiping cloths, proper food storage. There was a good crowd observed and food was moving during the inspection. A Temporary handwash station needs to be set up between the serving line and icecream serving station for easy access for all workers serving food. The food service event went from 12:00pm to 5:00pm.

Comments: Comment: Discussed monitoring cooling of Michigan Sauce using food probe thermometer with Food service manager. Other items served at food service included hamburgers, hot dogs, french fries, nachos, ice cream bars, candy bars and bottled drinks. Cited at last year's inspection was that Handwashing was not readily available to food workers. Facility did set up temporary handwash station in food prep area. Manager stated a more perminemt hand wash station would be set up this year. Test strips were also acquired. Inspector will drop off Temperature Guide.

Comments: Comment: Menu served included: Michigans, hot dogs and hambugers, cheese nachos, bottled drinks, prepacked chips and candy bars. A few hamburgers were cooked in advance to openning. The temperature of hose hamburgers hot held on grill measured well over 170F. The hand wash station in the food prep area portable, with no plumbing present in the kitchen area. It is very important that, the handwash station is fully equipped and consistantly used when food workers enter the food prep area.

Comments: Comment: Michigan sauce is from McSweeney's. One gallon is acquired every two weeks. It is portioned out and froze, thawed in refrigerator the day before service. Proper reheating and hot holding of michigan sauce was observed on day of inspection. Inspector will scan and send field copy inpection, portable handwash picture and Temperature guide to kitchen manager Jeff Boren.
