Comments: Waffle batter in dispenser located next to the waffle machine was at 80 degrees F. The batter was made in the am and placed out for service until 10 am. Approximately 4.5 hours. The facility does discard batter at end of service. Ice in cream cheese and yogurt service trays was melted. Product was at 45 degrees F. Need to keep track of ice and reapply as needed. Temperatures will increase quickly.

Waffle batter is made in am with cold water (56 degrees F) then put out for service. the dispenser does not have cooling blocks. Facility will get an insert that freezes to keep the batter cold. May need to mix with colder water (use water kept in cooler unit possibly). skim milk in insulted craft was 45 degrees F at 9:20 am. all cooler units were operating well. complaint investigation done.
