Comments: Resposible persons have developed a system of communication between the food handlers during the daily preperation and a second group of food handlers serving the evening meal. Logs for hot holding and cold holding were established and used allowing of continuity of food safety monitoring in between preperation and service. Staff were informed of the need to have corrective procedures determined before monitoring discovers time and temperature abuse. Staff were informed of time and temperature histories representing a need to discard, reheat, or place under refrigeration. Staff showed the ability to properly use thermometers, and use test strips to unsure proper sanitizing. These improvements have lead to the correction of all violations stated at the last inspection.

Comments: Todays food preperation lacked communication and chain of custody of responsibilities between morning staff placing food into hot holding and a different set of food handlers taking over responsibility at the time of service. Freezer observations indicated a lot of foods are cooked and cooled. Jackie Black understood the inspectors concerns for achieving proper cooling time and temperature monitoring; therefore, she indicated she would institute logging of cooled foods for review at next routine inspection.

Comments: Operator was requested to contact inspector about the walk-in's and the bags of frozen meat sauce in the freezer. On 2/22/16 Paster Alan called the inspector to be informed of the need to submit plans for the partially constructed walk-in's. During the phone call the inspector interviewed the lady responsilble for cooling of meat sauce. She described a rapid procedure with the use of 2 inch deep metal pans in an ice bath. The person who monitored cooling and method used for the frozen bags of meat sauce were not determined. Maintenace man called for specific instructions for submitting plans . He was told to submit a layout drawing indicating dimensions; and specific's for surfaces, lighting,shelving, compressors, plumbing, and thermometers. The need for a smooth, sealed, durable, water resistant, and easily cleanable floors was explained.
