Cafeteria serves for two hours. However, food is placed on hot holding in shifts to accomadate the waves of students coming to cafeteria at various times throughout the lunch period. Menu served on day of inspection included waffles, Baked chicken, sweet potato fries, canned oranges and milk. Discussed covering food items that have cooled below 45F first thing in the morning instead, of leaving uncovered all day with kitchen manager. |

Menu served on day of inspection included: Nachos with meat sauce and cheese, refried beans, chopped onions, tomatoes, and black olives, corn, pineapple, grapes and milk. Serving time goes from 10:45 to 1:00. Discussed cooling process of chili that was found in walk-freezer with kitchen manager. Thawing occurs in the walk-cooler the day before serving. It was learned that cafeteria facility occasionally cools large volumes of food. Kitchen manager appeared to have a solid understanding of proper cooling. |
