Comments: Note: Summer feeding food service today consisted of products not requiring refrigeration and shelf stable single service milk cartons. Delivery and service time /temperature logs available for review. Current temperature of kitchen refrigeration unit 41F... Defective refrigeration unit that was previously designated for summer feeding lunches at 41F top shelf, 46F middle shelf and 53F bottom shelf. PHI advised defective refrigerator to remain unused for potentially hazardous food storage. Repair or replace and advise DOH prior to being put back into service. Per food service supervisor, summer feeding lunches that were held over from prievous days deliveries had been placed in kitchen area refrigerator. The refrigerator door had been inadvertently left open overnight on 7/17 and and all potentially hazardous foods ( summer feeding and facilities foods) subjected to being out of were corrected by operator disposing of foods the following morning.(7/18) PHI discussed with site supervisor that any potentially hazardous summer feeding foods need to be placed into the current designated refrigerator on the the second floor pantry, pending correction of other refrigeration.

Comments: Note: Refrigeration unit designated for storage of summer lunches was not maintaining food temperatures at or below 45F. Refrigerator monitoring thermometer at 60F at time of inspection. Inspectors review of potentially hazardous foods stored in unit ranged from 49 to 57F. Per service staff, foods for summer feeding arrived at approximately 10:00am and were placed in the refrigeration unit. (approx 2.5 hours prior inspection). No verification as to temperatures of foods at time of pick up or arrival to facility. Per discussion with staff, unserved foods are retained for service for the next days and may be retained for up to 3 days for service. Per service supervisor, pre meal milk temperature was 40F, sandwich temperature not taken. Due to food retention, time frames and temperatures found, all foods currently above 45F and for an unknown period of time were voluntarily discarded. Facility supervisor was advised by PHI to discontinue use of refrigeration unit is able to maintain food temperature at 45F or below at all times of cold holding. Notify DOH prior to putting refrigeration unit in service. Verify temperatures of food on receipt and reverify prior to food service. Alternate refrigeration on site acceptable to use for cold holding... Reviewed temperature was at 39F
