It is highly recommended that thick foods be cooled at 2" or less to help promote the proper cooling. - All potentially hazardous items are to be hot held at 140F or above. - Owners stated that they start the general preparation work around 2:00pm daily for service. Due to the above red violation the Department may take an Enforcement action against the facility. |
