Comments: Using Time as a Public Health Control was discussed for hot and cold potentially hazardous food on the serving line. Forms were reviewed and found to be acceptable. Discussed moving the time removed from temp and discard time for each prodct to the top of the form. Per interview with the kitchen manager, some construction modifications to the kitcehn may take place. Please submit plans to the DOH for review and approval prior to making any changes.

All cold and hot holding temperatures were found to be acceptable. The menu was reviewed at the time of inspection. No campers have food allergies this year. outbreak procedures were reviewed. Pizza and salad was prepared the day of inspection.

Comments: This program utilizes time as a public health control, which was observed being carried out correctly. All refrigerators and freezers were observed as working properly. The chlorine sanitizer solution in both the cleaning buckets and the sanitizing bay of the 3-bay sink were at acceptable levels.

Comments: hot holding of chicken - 147 deg F. all cold holding temperatures were at or below 45 deg F. 3 bay dishwashing is being performed properly. use of Time as a public health control (TPHC)was discussed. per interview, Time as a public health control is being used for hot and cold food products that are being served for summer feeding. Upon review of documentation and interview with the kitchen staff, it was discovered that only hot food temperatures are being recoded prior to being placed out for service. Sandwiches containing cheese and deli meat were served the day prior to inspection and the temperature was not documented on the daily log. Education on using time as a public health control was provided. if TPHC is going to be used for summer feeding a separate submittal will have to be turned in to our office for approval and terms will be set forth on your permit.
