Comments: Discussed this deficiency with the operators. This is the second time that we had a discussion about cooling rice and any other potentially hazardous food in a large, deep container. Emphasized that the best containers for rapidly cooling these types of foods are shallow, stainless steel containers that can dissipate the heat away from the food to meet the six hour rule: two hours to cool from 120 to 70 degrees F, and four hours to cool from 70 to 45 degrees F. Report must be mailed. |
