Comments: All deficiencies need to be corrected. Raw clams have a copy of the tag attached their storage container. Food in the True Reach-In Cooler was measured to be about 39 degrees F and food in the Pizza Station Cooler was measured to be about 38 degrees F. Ice cream drink mixes are no longer being used at this facility once the summer is over. The cooler where these mixes were stored has been repaired. All cleaning supplies, including bleach, are now stored on a shelf located above the drain board on the Mechanical Dish Washer. No food is stored below this shelf.

Comments: Sliced ginger in prep station #1 temped at 44 degrees; slaw temped at 35 degrees in prep station number 2; mac salad 38 degrees temped in world ny fridge; roast temped at 43 degrees in reach in;potato salad temped at 39 degrees in walk in; dukes temped at 41 degrees in may tag fridge. No cockroaches seen at time of inspection. Discussed past issue with Robin and he states that they've been more actively engaged with Pestech and ensuring that the company is being thorough. Restaurant was also fumigated since last inspection. Gloves, probe thermometer available at time of inspection. Discussed use of raw meat boxes as storage for other items as inappropriate with cook. Owner stated that no hand wash sink is needed in pizza prep area because prep is mostly done near sink in dishwash area. He discussed it with someone.
