Door of cooler had been ajar during prep time (approximately 30 minutes), owner readjusted thermostat to bring cooler temperature down. Coolers, storage, thermometers ok.

Comments: The walk in cooler door has been adjusted so that it is tightly fitted with minimal air loss. Also, walk in cooler food items were observed to be at a range of 42-45 degrees for items that have been there over night. The air temperature over the fan grates was 41 degrees. there is better airflow through the center fan than those on the ends, the owner will have the serviceman look into the airflow through those fans to see if they can be improved. Otherwise staff must be reminded to keep the door closed.
