Item 5A (Critical): Potentially hazardous foods are not kept at or below 45°F during cold holding, except smoked fish not kept at or below 38°F during cold holding. Comments: Part 1: Critical Violation of item 5A. Part 2: No violations observed Comments: Discussed with operator/manager how to monitor cooler temperature for checking proper operation. The grab-n-go cooler that was cited for a 5E violation on 4 Aug 2017 is still in operation and, at the time of the inspection, the operator/manager was looking to see if there is any repair order/invoice for this unit. In the meantime, the operator has moved most of the temperature controlled items to a vertical cooler by the back of store, adjacent to a drink cooler. The grab-n-go in question on the 4 Aug inspection now has primarily drinks but the very top shelf has yougurt products, that were observed at 41.8F. |
