Corrected. 5A&E--Beverage Air cooler on the cookline measured an ambient air temp. of 62 degrees F using the inspector's stem thermometer. The food in the same cooler (including raw eggs, sandwiches, etc) mesured @ 61 - 63 degrees F using the inspector's digital thermometer. All product was voluntarily discarded by staff. Corrected. 8A--Hard plastic pallets are being used for storage, which does not allow for easy access to clean beneath. Repeat 11A--Chlorine sanitizer for wipe towels measured @ < 10ppm cl using the inspector's chlorine test strips. Added more chlorine to achieve the ~100ppm cl needed. 11D--Cooler gaskets throughout the cookline have food debris. 15B--Light in Beverage Air cooler on cookline is shielded but is missing the end caps. 16--Permits are not posted conspicuously.
