Pasta was cooked yesterday and prechilled in gredients used corrected 5a + 5e- traulsen cooler on line ambient air temped at 52dF at time of inspection, Temped PHFs and found tuna salad at 52dF, tuna sandwiches at 52dF, and turkey sandwich at 51dF. All had been in unit less than 2 hrs . Allowed to put back in walk in and corrected- maintenance called corrected
