In the absence of a stand alone hand washing station at the bar; it is required to utilize one of the sink basins for hand washing. The facility shall utilize the kitchen ware washing facilities for all glassware requiring cleaning and sanitizing. All food preparation requiring the use of a food preparation sink shall be performed in a clean and sanitized sink basin containing an indirect drain fixture. - Currently; The facility is utilizing the kitchen 3-compartment sink for food preparation activities. In the absence of a stand-alone food preparation sink; the facility may utilize a clean and sanitized basin of the 3-compartment sink which contains an indirect drain fixture. In the event that the 3-compartment sink is needed for ware washing; all food preparation activities shall be performed prior to or following times of ware washing operational need with the sink basins thoroughly cleaned and sanitized following use. - Be certain to separate employee food and beverage items from operational food storage in the reach-in cooling unit. Create a designated and labeled storage area for employee items to prevent accidental contamination of consumable product. Note: all employees shall immediately wash their hands following the consumption or use of any personal item. - Be certain to maintain all cut produce items (ie. lemons stored at the bar) on ice to maintain proper cold holding temperatures of 45F or below.
