Comments: Reinspection conducted following stipulation agreement for improper cooling of potentially hazardous foods. At time of reinspection, large plastic container, approximately 22qt capacity, 10 in diameter, 14 inch depth, of cooked peppers observed cooling with cooling wand in walk-in refrigerator. Temp of peppers approx. 65-75F, and had been removed from cooking approximately 2 hours prior. Product may or may not meet cooling schedule (120F to 70F within 2 hours and 70F to 45F within 4 additional hours) as currently packaged. Food worker advised to monitor cooling temperature and time.
