Discussed that if facility does decide to serve PHF/TCS such as diary products, facility would need to obtain probe thermometer to evaluate temperatures of foods. All cold holding units at bar had hanging monitoring thermometers located near front of units. Observed ice machine, with clean baffle. Facility had sanitizer test strips (quaternary ammonia). Per owner, when facility runs out of quaternary ammonia, they use chlorine, which test strips were available as well. All hand wash stations, including the men's and women's bathroom had adequate hand wash supplies, such as soap, papers towels, and warm water. |

PB and ZJC investigated indirect drain in basement. Ice bin at bar and ice machine in storage room were observed emptying into indirect drain in basement (blockage evident, leak of floor, see violation 12C.2). Discussed options regarding method to properly drain soda gun holster at bar. Per operator, she plans on installing indirect drain (air gap) at drain line under ice bin at bar. Operator plans on putting soda gun holster drain into indirect under ice bin. At sliding glass door drink cooler at bar, observed condensate pan catcher next to condenser with small amount of condensate collected. Original design of unit employed catch pan for condensate. Piping of this condensate to indirect drain not necessary at this time. Operator is required to install removable cover over condensate of this unit for easy removal and cleaning of condenser and catch pan. Operator advised to empty catch pan regularly and add disinfection (sanitizing solution) regularly. |
