Comments: Sliced tomatoes were not held below 45F. Actual temperature was 55F-58F.This was corrected by discarding the tomatoes and replacing with fresh tomatoes and keeping the lid on the cooler covered. Fish was not held below 45F. Actual temperature was 50F and the fish had only been out for 20 minutes and was stored on ice. This was corrected by placing in the cooler until needed. The thermometer in the sandwich prep cooler was inaccurate. This was corrected by placing a new thermometer in the cooler. Hot holding temps were Potato soup 171F, Gravy 165F, Chili 175F, Spaghetti sauce w/MB 188F. Cold temps were Coleslaw 43F,Fruit 39F. Certified food handler certificate not on site. Ill food worker policy discussed.
