Sandwich prep refrigerator temperatures adequate. Soups/meatballs in hot hold unit were said to be heated to 165 degrees and placed into hot holding approximately 20 minutes before inspection. the hot holding containers above the water bath are all lined with food grade liners; said to be to make for easier cleaning. The hot hold foods were found to be at the following temperatures at time of inspection: Cream of broccoli soup: 110 degrees Chicken Noodle soup: 130 degrees Meatballs: 106 degrees These items were reheated to 165 by operator and then found to be at the following temperatures when re-tempted (approximately 30 minutes later): Cream of Broccoli soup: 153 degrees Chicken Noodle soup: 145 degrees Meatballs: 157 degrees Hot hold unit is said to require approximately 1-2 hours to reach and maintain temperature. The use of plastic liners may possibly hinder the ability of the unit to maintain adequate temperature of hot held food. Cassondra Proctor present at time of inspection. Education given on all deficiencies. All violations may result in enforcement. The following notable fire code concerns will be forwarded to local Fire Code Enforcement: 1. Fire extinguisher near back exit shows inspection tag with October 2016 date. 2. Fire extinguisher near front exit shows inspection tag with October 2016 date. 3. Fire exit sign at back door is visibly broken, repaired with clear tape, and the internal working are hanging outside of the unit. It is unknown if this exit sign is operational at time of inspection. |
