Foods are holding right at 45°F; therefore, recommend discard if temperatures of foods are not being routinely monitored. Lunch service is approximately 2 hours, not including preparation time. 2- Discussed monitoring of sandwich items in front sandwich unit. Currently sandwich items are taking out of bottom reach-in and placed in top display, which does not have a flip-top and is open to ambient air temperature. Foods again are maintaining exactly 45°F, except egg scald noted in report, but no monitoring of temperatures is on-going. Un-used portions are return to reach-in for re-use. Recommend active monitoring of temperatures, or you may opt to minimize portion in containers and discard after two hours (do not return to cooler for re-use). 3- Discussed use of grey bus-bucket for rinse phase of ware washing. You must maintain a procedure to wash, rinse and sanitize (in that order), at the two-compartment sink. 4- All violations must be corrected in a timely manner, and the proof of correction transmitted to the Glens Falls District Office. Uncorrected violations and repeat violations may result in the initiation of enforcement action and the imposition of fines. Tower Event Center located on top floor operates every Sunday for brunch, and during special events only. Cooking done in main kitchen, limited re-heating equipment installed in banquet facility. |
